millet mediterranean

You need:

- 100 g of millet
- about 700 ml of water (depending on how soft the millet should be)
- 1 onion
- 1 big zucchini
- 3-4 carrots
- 1 each red bell peppers, yellow, green
- 70 g of tomato paste
- 2 tsp coconut oil
- Salt, pepper, garlic, oregano and chilli as desired


Instructions:

- Bring the millet with water and a pinch of salt to a boil and then simmer for about 15 minutes at medium heat. If the water before its gone or the millet until al dente according to your taste still can be simply top up a little water and continue to simmer.
Take the millet at the end from the heat and let stand about 10 minutes again.

 
- In the meantime, cut the vegetables small and fried in a pan (preferably wok pan) with the coconut oil. The vegetables should, however, remain beautiful al dente. So do not fry too long :-)

 
- Then add the tomato puree and the spices, mix and season to taste.

 
- Finally, just the millet with stir and ready is the great vegan main course
